Daily Food Diary – Day 255 of 365

Today is Day 255 of my Daily Food Diary! πŸ’

Yesterday and today our weather has been WARM and WET.  I think we have gotten more rain in these two days than we have had all summer.  And the humidity is through the roof!

Things are looking green and clean around here, butΒ I can’t imagine that this is what the farmers need right now.

I am taking one final (regular) workout day off  today but I am excited about getting back into my routine on Monday.  It will be fun to see what I can do on our ‘new to us’ treadmill, now that my lung infection is cleared up.

Today, I will proceed with my fall cleaning and do a bit of baking.

Dan picked up a nice bag of apples yesterday, so I am going to make a double batch of Apple Crisp to split with Jen and Genie.   They are both excited and it will save everyone here from reading about Dan and I eating one piece of Apple Crisp a day for the next month. 😊

The flower pots are some of the ones that Dan bought this week to use on the new plant rack he is making next summer,  using  aΒ  repurposed pool ladder.

Daily Food Diary – Day 160 of 365

It is 160 Days since I started posting my Daily Food Diary. 😬

Yesterday was not a banner day in the the kitchen!

I was over on calories *, processed sugar, sodium, and saturated fats.  I fell short on fruits and vegetables.  😞

There was a BUT on the calories.Β  I was over because I didn’t do my aerobic workout in the  morning.Β  BUT, I was active all day – I  was just doing things that I don’t count the calories used for.

I brushed Molly, we took her for a bath, and I walked her home from the pet store (to help finish drying her).Β 

I finished the laundry, baked Lemon Squares for Danny and cut up all three squares I made and packaged them up.Β  I watered the garden and the flowers in the front yard.Β  I packed. I did the dishes from breakfast, lunch, and baking andΒ  cleaned the sink, counter tops, and stove top.Β  I tidied up the house, had a bath and did my hair.

I had a short visit with granddaughter Genie and I brushed Molly AGAIN.

Clean,Β  fluffy, and totally exhausted!

Today we hit the road to go up to son Dan’s to watch the boys for a few days.Β    It  should be a few active days and a few healthy days in the kitchen!  πŸ‘

Daily Food Diary – Day 125 of 365

Today it is 125 Days since I started my Daily Food Diary.Β  It is Day 5 of tracking the saturated fats that I consume in a day.Β  The struggle is real!

I needed something to kick-start my day yesterday so I opted out of my typical morning aerobics and returned to the freelance dancing that started my health and fitness journey.  πŸ’ƒ

Following an hour of dancing and lung clearing, I headed into the kitchen to do some baking.Β  Despite burning/blistering both of my hands, I persevered and finishedΒ  my oatmeal/bran/apple muffins. They cooked to perfection and with a decent consistency. They weren’t the worst muffins I have ever made. (That would be the muffins I scorched last week.) But they weren’t the best, taste wise (in my opinion). I should have used molasses instead of brown sugar. πŸ™„

Dan chopped the apple for the muffins and the vegetables and meat for the soup.  I managed to make the cornmeal muffins alone despite my muffin related injuries. πŸ™‚

Today I am making a pot of Baked Brown Beans to serve with a couple of leftover burgers.

I didn’t make my saturated fat goal again (or yet), but it is a work in progress. (And I am meeting my processed sugar AND sodium goals that I set last month. πŸ‘)

Daily Food Diary – Day 72 of 365

It has been 72 Days since I began my Daily Food Diary.  I do not plan  our meals for the week or the day in advance,  consider the calories involved, or the nutritional value.  For me, this exercise is about keeping a record of what we eat, watching for unhealthy trends, and ultimately making  adjustments as I progress through the year.

One thing that I have been doing, adjustment wise, has been tweaking a few recipes, and trying a few new ones.

Yesterday, for the very first time, I baked a loaf of NO YEAST Soda Bread. This was the recipe I used.

Honestly, I don’t know what the hell my oven did to my soda bread.  Fresh out of the oven it tasted pretty good.  Neither Dan, nor I, had ever tasted soda bread, but it tasted much like regular bread (sweeter).  It also had a similar texture. We tried toasting it. That was a fail. Rather than toast, it dehydrated. 

I have not really missed bread since I quit eating yeast.  I have missed buttered toast with raspberry jam.  This was not the answer.   AND… I have really missed Baked French Onion Soup topped with croutons and hot melted cheese.  I have tried a couple of other options but they were NOT the answer.  I am going to try making croutons out of this Soda Bread and test them out on a couple of bowls of onion soup for Dan and I this weekend.  Wish me luck! 🀞 

I am  going to check out other Soda Bread recipes to see if I can find one with less sugar.  I don’t know how crucial the sugar is to the texture of the final product.   If anyone has  experience making soda bread, I  would be grateful for any advice!
